Michelin-Starred Galvin Brothers to Open First Restaurant in Dubai

It’s official! Chris and Jeff Galvin are finally opening their first restaurant in Dubai. Every foodie in the emirates has been closely watching the British Michelin-starred brothers after rumblings about their intention to open an eatery in Dubai.

Demoiselle by Galvin is set to open in mid-March at City Walk, adding to the already flourishing café scene in the area. It is a sister branch to the already-successful venue in London’s famous Harrods.

The two-level restaurant will be able to seat more than 200 guests. In addition to what the brothers call a simple, yet varied menu, Demoiselle by Galvin will make artisanal bread on site along with a range of viennoiserie. Afternoon tea will be served in the salon de the, a modern day tea parlour on the first floor of the restaurant.

The idea is a product of a partnership with Emirates Youth Council, and her excellency Shamma bint Suhail Faris Al Mazuri, the UAE Minister of State for Youth Affairs.

Nothing is as refreshing as seeing younger generations use their limited resources and the power of social media to spread well. The latest viral good deed has been made by three Egyptian high school students, Muhammed Essam Abdou, Mohamed Essam, and Mohamed Magdy.

“Sandwich 3l7eet,” which translates to “Sandwich on the Wall,” is a smart and simple initiative that will work brilliantly – assuming restaurant owners think selflessly about the ones in need. The initiative’s idea, in a nutshell, is that the customers can order a sandwich and leave its receipt on the wall, and others who can’t afford the food could pick it up and take a sandwich for free.

The idea started when Mohamed Magdy saw a man ordering a sandwich and giving half of it to a homeless man in the street. Magdy immediately felt the need to help others, as no one deserves to spend the night hungry. This is just beautiful. Photos surfaced of two restaurants who were willing to help and it put a smile on our faces. We would love to see big franchises as McDonald’s and Cook Door with a ‘Sandwich 3l7eet’ banner soon.

Egypt Suspends Permits for New Imports of Brazilian Meat

Egyptian authorities has just suspended permits for new imports of meat from Brazil after concerns of tainted meat. Egypt is the second largest market for Brazil’s meat after China, according to Bloomberg.

 

The Ministry of Agriculture’s spokesperson stated that “Egypt is tightening inspection rules at ports and is holding off on issuing new import permits until Brazil’s investigation results into something.”

On the other hand, the meat producers’ division at the Federation of Egyptian Industries (FEI) refused the ban as it might result in increasing of the meat prices, causing a huge problem; especially with Ramadan approaching.

The Flavors Festival Is Coming to Abu Dhabi Next Week

Foodies all over the UAE are bracing themselves for the Abu Dhabi Flavors Festival that is set to take place next week. The 10-day festival will feature over 100 food tents and trucks by local brands.

 

The festival announced an interesting lineup of food competitions and entertainment activities that will take place at Umm Al Emarat Park from the 30th of March till the 8th of April.

 

The organizer of the event, Majid el Hamamy, told Khaleeji Times that “the festival aims to provide a unique taste of UAE’s rich and diverse cuisine, which is a blend of different influences and inspirations, making it as international as much as it is local.”

They will also be hosting the first Burger Grand Prix — a lap challenge for burger lovers, where they have to finish five burger stops to win gift vouchers that’ll let them eat more burgers! They’ll be selecting two applicants every day to compete.

 

The highlight of the festival, however, is the “Flavors League” competition. The League will feature hardcore eaters competing for the title “Flavors League Champion 2017” and a grand prize of Dh 5,000.

 

That’s not all; there’s another competition for cooks. “Tabkhati” (which translates to My Recipe), is a contest that demonstrates culinary talents. Participants are to upload a photo of their most special dish on Instagram or Facebook with the hashtag #Tabkhati and tag @ADflavors. The likes, comments, creativity, and sponsors’ decisions will shortlist five candidates to compete on the 8th of April; where the winner will win an iPad.

This Hummus Recipe Is So Easy It’s Going to Make Your Heart Sing

Hummus is proof that some of the most delicious and nutritious foods are the simplest to make. Hummus is a creamy, thick spread that is made mainly from mashed chickpeas and several other healthy ingredients, which has become quite popular all around the world in the past few decades.

 

It has long been enjoyed in North African and Middle Eastern countries and nowadays it is commonly eaten across Europe and North America too. If you are new to hummus and are still wondering, “what exactly is hummus?” then read on so that you can find out what it is all about, how to prepare it.

 

 

The Rich History of Hummus

 

 

Hummus has a rich tradition. According to the ancient scriptures, hummus was first made and consumed in Egypt around the thirteenth century, however, the recipe that was at this time is different from today’s recipes due to the fact that it did not include tahini and instead used other nuts.

 

Nowadays hummus is still one of the major foods that are included in the diet of a large number of healthy populations around the world, primarily in the Middle East. In Turkey and Syria, it is often included in the mezzeh tables. It is eaten with bread for breakfast in Jordan and Palestine and is still enjoyed by many people in Egypt and most Arabic countries in a wide variety of meals.

 

Hummus can be used a healthy condiment option due to its creamy texture. For instance, cooks may use hummus instead of mayonnaise in deviled eggs recipes. It can also replace sour cream on tacos and baked potatoes and in dips. Instead of mayo, the health conscious individuals can spread hummus on sandwiches and chicken wrap. Hummus can also be used as a replacement of cream cheese replacement on bagels.

 

 

Hummus Nutrition Facts

 

 

When you look at the nutrition facts of hummus, you’ll see that it’s loaded with nutrients. A 100gram serving of hummus contains the following nutrients:

  • Protein – 5 g
  • Fat – 9 g
  • Fiber – 5 g
  • Carbohydrates – 20 g
  • Vitamin B6 – 20 % RDA
  • Vitamin C – 13 % RDA
  • Folate – 15 % RDA
  • Zinc – 10 % RDA
  • Iron – 10 % RDA
  • Manganese – 28 % RDA
  • Phosphorus – 11 % RDA

 

 

How to Make Hummus

 

 

Making good hummus isn’t a trivial matter. The recipe might seem simple and the method of preparation easy, but it takes experience and skill to achieve the desired texture and taste.

 

Basic hummus recipes contain six healthy ingredients: garlic, chickpeas, sea salt, lemon juice, tahini and olive oil.

 

First, it’s important to ensure that the chickpeas are small, and have a smooth skin which is light-brown in color. Chickpeas of the Hadas or Bulgarian varieties and the small organic ones are the best. It’s very important to ensure that they’re fresh and to purchase them a grocery store or supermarket that has good storage conditions and a brisk turnover.

 

In contrast to the other legumes, the quality of chickpeas is normally measured by their ability to easily soften into a paste. As a result, they should be soaked for twenty-four hours in cold water and the water has to be replaced at least once. Some individuals add baking soda or baking powder to the water so that they can further soften the chickpeas. In this case, it’s important that you rinse them thoroughly prior to cooking them.

 

The chickpeas should be cooked for a long period of time over a small flame. Some individuals cook them all night in a huge pot with a lot of water. However, 3 hours of cooking are adequate to get the mashing job done. You should crush the cooked chickpea between your index finger and thumb so that you can assess how soft it is. When it’s reduced to a soft sort of puree –it is ready.

 

The chickpeas should be cooked without salt, however, you can add parsley, onion, and cumin seeds to the pot so that you can create a richer flavor. It`s important that you cook the chickpeas as close as possible to the time they`ll be eaten, and that you grind them while they`re still hot. You should reserve the water that you use to cook the chickpeas, and then add it gradually when you are grinding them, for a slightly-sweet result.

 

Hummus which has been kept in the in the refrigerator for some time will not be as tasty as fresh hummus. Another factor that you should take into consideration when preparing hummus is the freshness of the raw tahini that is critical for obtaining the sought-after taste. Fresh tahini will be soft sweetish, and light-colored. Overly thick, bitter tasting or dark tahini is either rancid or of low quality. Nabali or Syrian olive oil with a thick consistency and a dominant taste are required to make the hummus production experience complete.

 

 

Hummus recipe

 

 

Ingredients

 

Makes 4 or 5 servings

  • 500 grams of small chickpeas of the Hadas or Bulgarian variety
  • 2 grams teaspoon baking powder or baking soda
  • 3 grams cumin
  • 20 grams raw tahini
  • 90 mls. lemon juice
  • 10 grams salt
  • 2 garlic cloves
  • At least 800 mls. hot water ‏(preferably the water used to cook the chickpeas‏)
  • For garnish:
  • Hot, whole cooked chickpeas
  • Olive oil
  • Sweet paprika
  • Cumin

 

 

Directions

 

  1. Soak the chickpeas for twenty-four hours in a bowl of water with baking powder or baking soda. After twelve hours, replace the water but do not add new baking powder or soda. Drain the water and rinse the cooked chickpeas thoroughly.
  2. Transfer the cooked chickpeas to a pot and add water so that it reaches a level that`s 1 1/2 times the level of the chickpeas in the pot. Leave it to boil and skim off the foam which forms at the top. Reduce the flame and leave it to cook on a gentle boil for three hours. Confirm the softness of chickpeas by crushing one chickpea between forefinger and thumb. Drain and then reserve the cooking water.
  3. Traditionally, chickpeas are crushed using a pestle and mortar, but you nowadays people grind them in food processors or electric mixers fitted with dough hooks. Mash or grind together raw tahini, chickpeas, cumin, lemon juice, garlic, and salt. Add the water used to cook the chickpeas one cup at a time, while you are grinding the mixture, until you get the desired consistency.
  4. If the hummus isn`t eaten immediately, it will thicken within a short time. Before serving the hummus, sprinkle with sweet paprika and cumin and drizzle with a few drops of olive oil.

We’re all aware of the increase in prices, but we’re not particularly aware of the insanity that has happening. We usually think of the prices that belong to luxurious items such — from cars to phones to real estate — but we barely think of the bare necessities; food!

El Menus did just that, and it scared the bejesus out of us! They published their 2016 restaurants’ trends and user behavior insights, and have just revealed the “Prices Forecast in 2019.”

 

According to their info-graphics, they picked six dishes from different categories and examined how their prices changed from 2013 to 2016, putting into consideration the change in taxes. Then using the very same rate of change, they predicted the increase in prices.

The prices are terrifying, and they genuinely make us want to starve ourselves to death! The kebda (liver) sandwich will cost almost the same as what you pay for sushi. Let that sink in!

 

That wasn’t the only insight they had. Their insights included: The budget breakers, Where we are going, Who’s winning the food scene, What people are searching for in their cities, 2016 new cravings, along with many other studies, which are quite interesting for anyone in the business, or just the normal foodies like us.

How do you like your cup of coffee in the morning? Some like theirs black, others like it iced, and thanks to Dubai’s Costa Coffee, some will want it with a fresh squirt of milk straight from a camel or not.

 

Making the announcement in all seriousness in a press release on Wednesday, the coffee giants said that the camel will be available at the Jumeirah Beach drive-thru on April 1st and it will allow customers to milk it for their lattes, cappuccinos and everything in between.

 

We here at Scoop Empire though are 99.9% sure this is an April Fool’s joke. Sorry, Costa Coffee, but we can’t help but call you out on this!

Dubai-Based Professor Invents Space Chewing Gum for Astronauts

Franziska Apprich, an assistant professor at the Canadian University in Dubai (CUD), just created a prototype of a chewing gum designed exclusively for astronauts. Apprich worked with a fellow professor from New York University to create the UAE space gum.

The UAE space chewing gum might prove very handy for the future plans the UAE have in store for outer space. As we previously reported, UAE is planning to build the first city on Mars by 2117. The 100% locally produced space gum will not be all about the flavor, as the focus of the invention will be on the health and nutritional benefits.

Chewing gum can relieve tension, something we here on Earth would desperately want. The space gum will also help maintain oral hygiene, which is a real concern for astronauts. The UAE space gum will contain natural gum, silver particles, date paste, honey and vitamin C, all wrapped up in a star-shaped shimmery, silver package.

 

The professor stated that “the gum is all-natural so that no harmful additives are absorbed into the system.” The vitamin C is great as it supports the immune system, and the silver particles will be used to treat bacteria in the mouth to help prevent oral diseases. The honey and the date paste is there to provide an energy boost, tasty flavor, and a tribute to the UAE culture.

 

Apprich will showcase the product in Dubai Expo 2020, and will work with UAE Space Agency to execute this critical and exciting product.

This Sushi Sandwich Recipe Is So Easy and Inexpensive to Make

I love sushi as much as the next person (probably even more), but the one thing I hate about sushi in the Middle East is that it’s very expensive. Like seriously, why do 10 pieces of sushi cost a liver + my dignity?

 

It took me a while to realize that not only can you make better sushi yourself, but you can even be more creative. I present you the sushi sandwich; your soon to be favorite dish.

 

To start, you’ll need 1/4 cucumber, 200 g of sushi rice, 350 ml of water, 1 avocado, 50 g of cream cheese, 1/2 of lime juice, 1tbsp of rice vinegar, 2 sheets of nori weed and 250 g smoked salmon.

Once you get all the ingredients, Peel then chop cucumbers into thin ring-shaped slices. In a saucepan, bring rice, and water to a boil. Make sure to reduce heat to low and cook for approximately 12 – 15 minutes.

 

Using a hand blender, mix the avocado, cream cheese, and lime juice. Season to taste with salt and pepper.

 

In a large bowl, season rice with salt, pepper, and rice vinegar (this is really important as it makes the rice sticky). Stir well to combine.

Place one nori sheet on cutting board. Layer it with rice, the avocado cream that you just created, salmon, cucumber, more salmon, avocado cream, and rice. Place another nori sheet on top. Lightly press down to ensure that all of the ingredients stay in place. Cut into triangle-shaped sandwiches.

This Renga Salad Recipe Is a Must for Easter

Easter is upon us, and with it, comes the smell of renga (herring). One of Egypt’s Easter, aka Sham El Nessim — translates to smelling the breeze — traditions is eating a lot of renga.

 

Renga is a way of life during this festive time, but here’s just one problem; people usually associate it with eww things. In an attempt to change your perception about renga, we’ve brought this renga salad recipe that could potentially change your mind on how you see that smelly fish.

 

 

Ingredients:

  • 300 g renga fillets
  • 200 g sour cream
  • 100 ml cream
  • 2 tsp horseradish
  • 1 tsp mustard
  • 1 onion
  •  2 pickles
  •  1/2 bunch dill
  • 1/2 bunch parsley
  • 1 apple
  • 1 lemon

Directions:

In a small bowl, mix the sour cream, cream, horseradish, and mustard together to make a beautiful dressing. Finely dice onion, cut the pickles into thin medallions and chop dill and parsley. Make sure to cut the apple into thin slices as well and cut herring fillet into bite-sized pieces.

In a bigger bowl, mix onion, pickles, parsley, dill, apple, herring, and dressing together for one delicious yummy affair. Squeeze lemon juice into the bowl. Stir thoroughly to combine. Enjoy alone or with a thick slice of rye bread!

I Went to Kebdet El Brince for the First Time and It Was Everything I Wanted and More

I love kebda (liver) as much as the next person — probably even more — but never in my life have I ever thought of braving up and heading to Imbaba to try their ever-so popular Kebdet El Brince.

 

There wasn’t any particular reason why I’ve never been there before; it was merely because of where I live. I’m a Maadi person, and if there’s one thing you know about Maadi people is that we love our little bubble, and we could happily spend every day of every week in it.

It all started last weekend when I barhopped Downtown Cairo with a couple of friends. It was 2:17 am at Odeon Palace, and at that very moment, I’ve found myself in quite a dilemma; intoxicated and hungry. Some of my friends were sadly not keen on getting food and wanted to continue being hot messes, but the fat cow inside of me stood for what I believed in and managed to find like-minded individuals in my squad that also wanted the same thing; food. After that, heading to Kebdet El Brince was a no brainer.

 

My designated driver friend, Hedi, drove me and Trestan — another hungry person who believed in my cause — to that part of town. The Fabulous Three (what I’ve decided to call us) headed to Imbaba in the hopes of finding that one true kebda that we oh-so desperately craved, but of course, life always has a way of giving you the middle finger because we ended up taking the wrong turn to Imbaba.

 

After many failed attempts of finding the place using Google Maps, we almost accepted the fact that we might not find our way to Kebdet El Brince. Two parts of The Fabulous Three were already drunk and 99.9% about to settle for the KFC they just passed by, but thankfully, they didn’t. With the help of Hedi and her determination to get us to the Iron Throne of kebda restaurants, we asked Imbaba humans for directions, and then some more humans until we found our way.

 

I have never seen a restaurant so full in my life. Think a horde of Walking Dead zombies as humans attacking food; that’s pretty much how it was, a beautiful mess.

We took to our seats which is when The Fabulous Three had a proper fangirl moment. The one and only Brince came to greet us, and because it’s 2017 and the millennial blood runs so deep inside of us, we had to take a selfie with him; and what a glorious selfie that was.

Baladi bread, tehina and baba ghanoug dips soon took over our table, along with the kebda, sausages, wara2et la7ma (an Egyptian dish that consists of meat wrapped in paper and cooked using coal), knuckle soup, rice, and of course, their signature; molokheya. It was everything I never thought I needed…and more.

To say The Fabulous Three enjoyed their meal would be an understatement because we absolutely loved it! I, for one, am not picky with my molokheya. I could eat any molokheya (I order from Maadi’s Om Hassan all the time) and still enjoy it, but Kebdet El Brince was a whole other experience.

 

 

WE SAID THIS: The Fabulous Three are planning to go on another food adventure quite soon but we haven’t quite decided yet; Zizo Natana or Sob7y?
